Chef John’s Brie with Ripe Pear and Black Pepper

Ingredients :

  • 1 (8 ounce) wedge Brie cheese
  • 12 water crackers
  • or more as needed
  • 1 ripe pear – halved
  • cored
  • thinly sliced
  • Freshly ground black pepper
  • coarse grind
  • Methods :

  • Spread about a tablespoon of brie (including the rind) on the crackers. Top with a thin slice of pear. Coarsely grind black pepper on the pears.
