Cucumber Blueberry Feta Summer Salad
2 cucumbers – halved
and cut into 1/8-inch slices
2 cups blueberries
1 cup crumbled feta cheese
½ cup chopped scallions
¼ cup finely chopped flat-leaf parsley
3 tablespoons extra-virgin olive oil
2 tablespoons white wine vinegar
1 teaspoon honey
salt and ground black pepper to taste
Combine cucumbers, blueberries, feta cheese, scallions, and parsley in a bowl.
Mix oil, vinegar, honey, salt, and pepper together in a bowl. Pour dressing over salad; toss to combine.
