Healthier Bran Muffins Recipe

Ingredients :

  • ½ teaspoon salt
  • 2 tablespoons packed brown sugar
  • 1 ¼ cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 ½ cups whole bran cereal
  • 1 ½ cups vanilla soy milk
  • 1 tablespoon olive oil
  • 2 egg whites
  • Methods :

  • Step 1

    Preheat oven to 400 degrees F (200 degrees C).

  • Step 2

    Sift together the salt, sugar, flour, and baking powder in a large bowl. In a separate bowl, combine the bran cereal and soy milk; allow to rest for 5 minutes before whisking in the olive oil and egg whites. Fold the dry ingredients into the wet. Spoon batter into muffin cups.

  • Step 3

    Bake in preheated oven until lightly browned, about 20 minutes.
