“Heartbeet” Vegetable Burgers

Ingredients :

  • 2 ½ cooked
  • mashed sweet potatoes
  • 1 ½ cups quinoa
  • cooked and cooled
  • ¾ cup trail mix
  • 1 large golden beet
  • grated
  • 1 red beet
  • grated
  • ½ cup whole wheat flour
  • ½ cup whole wheat bread crumbs
  • ⅓ cup olive oil
  • ½ red onion
  • minced
  • 5 tablespoons parsley
  • minced
  • 3 tablespoons tamari
  • 1 tablespoon sea salt
  • 4 cloves garlic
  • minced
  • ½ teaspoon red pepper flakes
  • Methods :

  • Preheat oven to 350 degrees F (175 degrees C). Grease a baking sheet.
  • Combine sweet potatoes, quinoa, trail mix, golden beet, red beet, flour, bread crumbs, oil, onion, parsley, tamari, sea salt, garlic, and red pepper flakes in a large bowl. Mix by hand until burger mix is thoroughly combined.
  • Divide burger mix into 10 portions; press each one firmly into a patty. Place on the prepared baking sheet.
  • Bake in the preheated oven until golden brown, about 20 minutes.
