Vegetarian Greek Bell Pepper and Feta Bake

Ingredients :

  • 7 ounces feta cheese
  • cubed
  • 3 red bell peppers
  • finely chopped
  • 2 small onions
  • finely chopped
  • 5 tablespoons extra-virgin olive oil
  • or more to taste
  • 3 tablespoons tomato paste
  • 3 cloves garlic
  • minced or pressed
  • 1 teaspoon ground sweet paprika
  • or more to taste
  • 1 pinch freshly ground black pepper to taste
  • Methods :

  • Preheat oven to 375 degrees F (190 degrees C).
  • Combine feta cheese, bell peppers, onions, olive oil, tomato paste, garlic, ground paprika, and pepper in a baking dish or casserole dish with a lid.
  • Bake in the preheated oven until vegetables are soft and cheese is melted, about 25 minutes. Remove lid and bake for an additional 5 minutes.
